Cheesy Pan-Fried Zucchini Rounds

This quick side dish turns simple zucchini into golden, tender rounds topped with melty mozzarella and Parmesan.
Ingredients
2 medium zucchini, sliced into ¼-inch rounds
2 tbsp olive oil
Salt & pepper
½ cup mozzarella, shredded
¼ cup Parmesan, grated
1 tbsp parsley, chopped

Instructions
Season zucchini slices with salt and pepper.
Pan-fry in olive oil over medium heat, 2–3 min per side until golden and tender.
Lower heat, sprinkle with cheeses, cover, and melt for 1–2 min.
Transfer to platter, garnish with parsley, serve hot.

Tips: Add red pepper flakes for spice, Italian seasoning for flavor, or breadcrumbs for extra crunch.
