This simple dish always brings me back to my grandmother. She was from Ireland and made it often, filling the kitchen with warmth and comfort. Every time I cook it, I’m reminded of her. I hope you enjoy it as much as I do.
Serves: 4
Prep: 10 minutes
Cook: 30 minutes
Ingredients
- 3–4 large potatoes
- 1 onion, sliced
- Oil for frying
- Salt and pepper, to taste

Instructions
- Peel the potatoes and slice them thinly, about ⅛–¼ inch thick.
- Heat oil in a seasoned or non-stick frying pan over medium heat. Carefully add the potatoes and cook uncovered.
- Fry for 20–25 minutes until golden and crispy, gently flipping them without stirring too much so they stay intact.

- Garnish with green onions and serve warm—ketchup optional.
Simple, comforting, and full of memories.
