Ingredients

  • 4 firm green tomatoes
  • 2 eggs
  • ½ cup milk
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • ½ cup plain bread crumbs
  • 2 tsp kosher salt
  • ¼ tsp black pepper
  • ~1 quart vegetable oil (for frying)

Quick Instructions

  1. Slice Tomatoes: Cut into ½-inch rounds. Discard ends.
  2. Prepare Breading Stations:
    • Flour in one dish
    • Egg + milk in another
    • Cornmeal + breadcrumbs + salt + pepper in a third
  3. Bread Each Slice: Dredge in flour → dip in egg wash → coat with crumb mixture.
  4. Heat Oil: In a skillet, heat ½-inch oil to 350–375°F.
  5. Fry in Batches: 2–3 min per side until golden and crispy.
  6. Drain: Transfer to paper towels. Rest a few minutes before serving.
