Why Everyone Loves Pan-Fried Potatoes with Sweet Onions

This simple dish always brings me back to my grandmother. She was from Ireland and made it often, filling the kitchen with warmth and comfort. Every time I cook it, I’m reminded of her. I hope you enjoy it as much as I do.
Serves: 4
Prep: 10 minutes
Cook: 30 minutes
Ingredients

3–4 large potatoes
1 onion, sliced
Oil for frying
Salt and pepper, to taste
Green onions, for garnish

Instructions
Peel the potatoes and slice them thinly, about ⅛–¼ inch thick.
Heat oil in a seasoned or non-stick frying pan over medium heat. Carefully add the potatoes and cook uncovered.
Fry for 20–25 minutes until golden and crispy, gently flipping them without stirring too much so they stay intact.

When the potatoes begin to crisp, add the sliced onion and cook for the final 5 minutes.
Season with salt and pepper, mixing gently.
Garnish with green onions and serve warm—ketchup optional.
Simple, comforting, and full of memories.
