- 4 Russet potatoes
- 2 tbsp olive oil
- 2 garlic cloves, minced
- ½ tsp dried rosemary
- 1 tsp dried thyme
- Salt & pepper to taste
- Fresh parsley (optional)
Instructions:
- Preheat oven to 400°F (200°C) and line a sheet pan.
- Prep potatoes: Scrub clean, dry, and score thin cuts across the top (don’t slice all the way through).
- Mix seasoning: Combine oil, garlic, herbs, salt, and pepper.
- Season: Brush mixture over potatoes, making sure it gets into the cuts. Save a little for later.
- Bake: Roast for 45–50 minutes, brushing again halfway through. Potatoes should be crispy outside, soft inside.
- Garnish & serve: Add parsley or toppings like cheese or sour cream, and enjoy hot.
