Ingredients:

  • 4 Russet potatoes
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ tsp dried rosemary
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley (optional)

Instructions:

  1. Preheat oven to 400°F (200°C) and line a sheet pan.
  2. Prep potatoes: Scrub clean, dry, and score thin cuts across the top (don’t slice all the way through).
  3. Mix seasoning: Combine oil, garlic, herbs, salt, and pepper.
  4. Season: Brush mixture over potatoes, making sure it gets into the cuts. Save a little for later.
  5. Bake: Roast for 45–50 minutes, brushing again halfway through. Potatoes should be crispy outside, soft inside.
  6. Garnish & serve: Add parsley or toppings like cheese or sour cream, and enjoy hot.
